A Deliciously Sweet Treat When You Get Those Cravings
Every so often enjoying a great tasting loaf of banana bread as a sweet treat is absolutely delightful. Especially when itis this decadent but nutrient rich recipe. This is so tasty that it has officially become a fan (the two of us here in the house) favourite. Careful, we struggle not to eat it all in one sitting.
You can make this banana bread in one large bowl, or split it into 2 of liquid and dry. Either works. We use thawed frozen bananas, from the smoothie stash, mashed up with palm sugar, vanilla and melted coconut oil. Sometimes I will add a touch of maple syrup for the sweetener as well.
There are different things we do to make the recipe different. Nothing like a little variety in your banana bread. The first one we made was simple, some walnuts. Plan and simple. The next one we tried dried cherries in addition to the walnuts. The last time we made it, we added chocolate chips. This was our favourite version.

Vegan Banana Bread Recipe
Pre-heat the oven to 375 degrees This entire recipe is made in 2 bowls
Bread Base – Dry Mix 3 cups flour mix (1.5c all purpose / .5c coconut / .5c oats 1.5 tablespoons baking powder 1 teaspoon baking soda 1 tablespoon ground flax seed 1/2 teaspoon cinnamon pinch of ground gloves
Wet Mix 4 frozen mashed bananas 1/4 cup coconut sugar 1/4 cup maple syrup 1/4 cup melted coconut oil 1 teaspoon vanilla

Make the Banana Bread
It is time to put all your ingredients into the bowl. Mix them together with a spatula until you have a thick sticky pancake like consistency. You would be able to use the spatula to move the mixture from the bowl to the loaf baking pan.
Before you place the mixture into the bread pan, be sure to create a non stick coating over the surface of the pan. Grease the pan with some coconut oil and flour the surface after that. Instant non stick surface.
This is where you can add in walnuts, chocolate, whatever really suits your fancy! We are considering pineapple and coconut cashew. It really depends on what you like.

Renee RK – GenX – 16 Yrs Old – 1990
When you are 16 years old, as Renee said, “Everything is about longing.” and she goes on to say “which sums up the teenaged experience, really” and I would agree. In my days as a 16 year old I was certainly full of longing and music really helped shape my views on things. (As well as live vicariously through the lyrics) So below are Renee’s picks for her 16 year old self. Let’s see how much longing there was there through her musical choices!
Oh man, there was a lot of hype when Guns N Roses came onto the metal music scene. Some hated them, some loved them, girls were crazy for Axl. Well at least in my circle of friends. I did not understand the music or the love of Axl. Likely because I had already moved onto the grunge with bands like Alice in Chains and the song Man in the Box. Still in the hard rock metal ish genre, however I was not the GNR fan others were.
Fade to Black – Metallica
This is a song Renee and I likely had in common but only a few years apart. I remember how this song spoke to my soul when I was in grade 10 industrial arts class. I would be working on my jewellery or my Ratt and Roll tea set when a fellow student asked what was in my headphones. I shared with her. She did not understand. How do you explain Metallica to someone who does not get it. Especially when listening to the “Ride the Lightening” cassette. (Yes! I did say cassette.) Back in the good old days when we still had portable music devices but they were Sony Walkmans that played cassette tapes and were tethered to your ears with wires that often failed.
This song definitely described the teenage experience for me. Not only in music but also in substance. Angst, deep dark emotions I had no idea how to deal with, life moving past me ( I still feel this way) While truly I had not then or now lost the will to live… however sometimes words and music can just express what the mind in the moment is incapable of processing.
Crimson and Clover – Joan Jett
This song most represents the teenage longing Renee speaks of in her descriptor. I mean not just in the music, but the lyrics as well as the secret lesbian crush most young blossoming dykes held for Joan Jett. I recall one night at a club on Ventura. In a very dark men’s bar with goth like dancing, there were Joan Jett and Carmen Electra making out. Seriously true story. I actually did not believe it until we were out of the club and once it sank in I wanted to go back. There could not have been more than 10 people including staff at this club.
I can see why Renee might have liked Joan Jett. I mean she always gravitated towards dark haired masculine women. Joan would have been her type I suspect. (Feel free to comment Renee) For me it was different, though I get it now. I was never attracted to Jon Jett, but I found her to be so cool! This was the draw. Finding out she was queer only made it that much more interesting.
But back to the teenage longing… The video starts with her letting out a moan and a close up of her lips… as the song progresses the hunger seems to get more and more. Not an original to Joan Jett but a well received cover done with that rock flair of the late 80s.
Great song! Cannot deny that… I mean the guitar intro at the beginning, the vocals, its a great song. I am just not a huge Pink Floyd listener. Blasphemy right? I do respect the music and every so often I will give it a listen. Like when building the accompanying playlist or listening to all songs repeatedly to accurately tell how I see the music.
I do have a life story watching Pink Floyd, The Wall on the television at my friends house while eating pomegranate seeds. Highly surreal as we were also on acid. (Yeah! It was the 80’s!) There were a lot of these types of weekends back then. I admire people who are die hards of Pink Floyd. It’s almost like the fans of the Grateful Dead. I mean they have some good songs but really? lol No offence, just my perspective.
Love Song – The Cure
The Cure were always a band I enjoyed listening to. They stemmed from my love of 80’s Brit Pop! A timeless classic Love Song captures the essence of enduring love. The back drop and what draws me in, the haunting melody and lyrics that expound the story of love. There is a simplicity in the songs structure that gives it strength as a love song. There are lyrical sentiments that just resonate with the listener. I mean we are all young and passionate about love once right.
The sure and Robert Smith have this ability to write music that spans generations.It is heartfelt, introspective and leaves a lasting impression.

Delving into the song selections of the era, one can’t help but notice the profound evolution that has taken place over the years. Each track serves as a poignant reminder of the passage of time and the inevitable shifts in taste and perspective.
My long time mate’s musical preferences, once adorned in leather jackets and immersed in the vibrant energy of our Deco’s days, they now exude a sense of tranquility and ease. It’s a testament to the profound impact that 34 years can have on one’s outlook and demeanour.
I’ll Look Around – Billy Holiday This track is a poignant and soulful exploration of love and loss. With Billy’s distinctive voice, I would not be turned on to her music until much later in life. However, when I did in college, I was so drawn to her delivery of haunting vocal performances. Her ability to just resonate that bittersweet feeling of longing and acceptance.
I’ll Look Around stands as a testament to Holiday’s artistry. The ability she had to convey profound feelings and emotion in her music. What a mark she left on jazz and music history.
Ain’t No Sunshine – Bill Withers Another timeless masterpiece in Renee’s list. Clearl she likes songs that carry haunting melodies and profound emotional depth. There is a longing and a heartache in the song that lyrically resonates making the song relatable.
This is a Withers signature track. Ive always loved the power behind the lyrics and his refrain that echoes through the loss and pain of heartbreak. I think we have all been there.
Renee is shifted into a world of songs that will always stand the test of time.
So, full disclosure: I might not be the biggest Pink Floyd fan out there. (And yeah, Renee’s not exactly rushing to put on some Rush or Van Halen on either) Yet, if I had to pick a Pink Floyd favorite, “Time” would be it.
There’s this indescribable feeling about it—the serious and riveting exploration of time that is introspecitve. From the opening clocks through the lyrics the track captures lifes relentless march forward.
“The sun is the same in a relative way, but you’re older” – it hits home, doesn’t it? It’s like seeing Renee fret about time slipping by, and you can’t help but feel a twinge of empathy. Because in the end, it’s all about the journey, the ups and downs, the fleeting moments that make life so precious.
And from out of left field comes this one! Not exactly haunting and introspective, but her son gets a kick out of dancing to it so… Gotta keep his feet moving! (I may also need to admit I got up and started doing various 56 year old versions of the robot dance)
The boy ceetainly likes a high energy sonic adventure that blasts us into a futueristic realm of hip hop dance and innovation.
While it is not a deep song by any stretch what I love about the tune is this. The song’s pulsating rhythm and catchy hooks… its impossible to resist moving to. Plus the rapid fire clever word play! A true showcase of the Beastie Boys’ signature style.
And we are back to the hauntingly beautiful journey through the depths of introspection and melancholy music my mate has adopted. This tracks delicate accoustic guitar melodies paired with plaintive vocals draws in the listeners emotional side.. The lyrics paiting a vivid sense of longing that lingered long after the music ended.
Not sure it is my jam but if you ever wanted to listen to more Beastie Boys or 80s Metal I am all in!

Trying to live a healthier lifestyle can be very difficult
Are you struggling just as I am to overcome your bad eating habits? Does the idea of watching what you eat really leave you feeling defeated? Boy do I hear you.
Since putting it out there that I am attempting to live a healthier lifestyle I feel like I have done the complete opposite. Struggling to make the right choices these last weeks have demonstrated to me that I am highly addicted to the unhealthy choices I continue to make. I know the key to overcoming the health issues that I am facing is to adapt to and live a much healthier lifestyle.
Since the first 2 weeks of deciding to record videos documenting the ways I have learned to eat healthier. Applying the knowledge of a short course over 5 years ago in nutrition, a vast read knowledge of how to choose macro eating over calorie reductions and starvation techniques, as well as the support many online resources I still end up resorting to the old unhealthy ways of eating. I find myself stuffing my face with things like pastries, cookies, chips and popcorn. The trips to A&W for the Beyond Meat burger and the cheating on no meat to eat charcuterie boards and parma on baguettes in Madeira, Portugal.

I am a stress eater. Food is my go to comfort for all things in life except heartache. I refuse to be in a perpetual state of heartbreak just to lose weight and be healthy. Anytime I get stressed or feel good about life, which apparently is quite often because look where I am, I end up right back up close to 300lbs. Th trouble is this time I am also in the worst shape of my life. With past and present health issues most certainly caused by my die and health, you might think after several roller coaster rides around this weight loss thing I would get it by now. Except I don’t. If I did I would not be here, not writing this, hoping to somehow let it sink in.
Instead, yet again I feel the early sounds of defeat drumming in my head. I feel so close again to just accepting the defeat and accepting whatever outcomes accompany my change back to the past. The trouble is… I don’t want to. I want a healthy active stress free leaner life! So let’s turn it around. Every day can be a new beginning and a step forward. Even if you experience two steps backwards at times, there are moments to move forward.
When we returned back from Madeira, Portugal I noted that I had actually lost weight while traveling. Despite eating from a couple of junk food meccas and indulging in the meat products I was actually down 7lbs from my weigh in before leaving. After seeing this I took stock of what and how I ate during that time to see what the cause could have been to effect the loss despite bad habits creeping in. First, I was not fasting. Food was consumed between 10 am and 8pm. No window there. It was however limited to 3 meals a day, no snacking in between, no additional food outside breakfast lunch and dinner. Additionally, the food portions are not as huge. In north American culture, it appears as though the more you are given, the more you will eat. Portions were nearly perfect every time we ate.
Every morning I would start my day with the hotel free breakfast choices. this was eggs on toast with a small mango arugula salad. (I always left the mango to the side.

We were also walking more. Daily average steps increased substantially during the time we were there when we were out exploring. Walking around the Funchal streets and down to the marina daily provided enough exercise to burn off some of the calories. In fact average steps per day increased over the previous month according to my apple health step counter.
How to translate travel eating into home eating?
Not going to lie, since being back I have been eating non-stop. Certain to gain back the weight I lost while traveling, my goal this week is to find the things that helped and optimize them into new habits.
The biggest difference noticed was that there was no snacking. No food in between meals meant calories were reduced. Even if it looked like I went over from the types of foods that were ate, at the end of the day, strictly eating 3 meals in an 10 hour period proved more effective than almost constant eating. Conclusion: Fasting does not work if you are constantly grazing. Limiting meals to 3 times a day can actually help. That will be my challenge this week. Trying not to graze.
Are You Getting A Complete and Balanced Breakfast?
Getting a complete and balanced breakfast is a priority goal I have set for this month. Part of that includes not eating it before 10:00 am, and choosing to eat foods that come from trees. In December I met a fellow who put some interesting ideas in my head regarding eating with by following the sun.
Consistently failing at breakfast, over the years I have learned to ensure I get the most healthiest foods first. Just like the trees which are first to receive energy from sun, breakfast is the fuel that wakes the human engine up and gets us moving. Trees produce all kinds of wonderfully nutritious foods, these same foods are said to be the best or when you rise.
That first cup of morning coffee, the bean is from a tree, breaks the night time fast. The fast of the night is broken by drinking coffee. Seeing how much I enjoy food, you would think after 16 hrs of fasting it would be the first thing on my agenda. Sadly, not so. I prefer to wait until after 10am before I eat. Which means calories cease to be consumed after 6pm.
Why breakfast is so important. Essentially you have just gone the longest period your body goes without fuel. During this time your body has been processing all the food you consumed the day before. When you awake your body needs the fuel to metabolize glucose, or blood sugar, all day. Prolonged fasting, leads to a greater boost in hunger hormones.

What are some of the components of a healthy breakfast?
To live a lean and healthy lifestyle, I have found that beginning my day predominantly with food that comes from the trees. So there is the shot of Apple Cider vinegar Apple Walnut Oatmeal or a Banana Smoothie. Both of these contain food from trees. Why food from the trees? Well…
Last December, I happened upon a gentleman running an AirBnB experience in Ojai California. I was quite taken with the way he spoke of life and food. You can view a the Pizza Experience on my youtube page. Anyways, When he spoke of his eating philosophy, he talked specifically how the body’s circadian rhythm is tied to the environment and if we follow the sun in our eating habits, our bodies actually process the nutrients better.
It all starts with breakfast. As the sun comes up over the horizon and you begin to rise yourself, start with water, the early mornings dew. The first thing the sun touches as it rises is the tops of the trees. So think apples oranges etc. Many trees in different areas produce fruit or nuts and this is where is it suggested we look to compile our first meals of the day. I will be researching and writing more on this in coming blogs.

Over the years I have not been kind to myself. My story is not unique, there are so many people out there who have and still struggle with their own health and weight. Living a rollercoaster ride of weight loss and gain. I was a childhood athlete who grew up to be an adult obesity statistic.
At my highest I was 325lbs. That was the first time being overweight scared me. Having developed high blood pressure and Acid Reflux, the Dr and Nutritionist were straight up, LOSE WEIGHT! This was 2010. During the last 10 years I have been down to 247 lbs and up to as high as 290 recently.
In August of 2007 a move to LA weight management become uneasy. Despite gaining back 10 lbs I was confident I could continue the good health path. FAILED Again. An emotional eater, in 2008 my father passed away, I was living unhappily with a woman who was also overweight and I ate away the pain. We visited in Toronto in October 2010 to attend my best friends wedding. When looking at the picture it became strikingly clear that the problem had returned, BIG TIME. This is when I weighed in at over 325lbs. It was absolutely horrifying.
Returning to LA, determined to find a trainer and lick my obesity problem. I met Billie in November 2011 and honestly she was the perfect fit. With Billie’s guidance I was again on my quest to lose weight and be fit. Soon I became a beast in the gym and worked my way down to 255 lbs This was end of summer 2012. During that period I never gained any weight back, despite the heartache of now losing my mother.
December 2012 I returned again to Toronto for the holidays. I threw discipline out the window and… When my TN1 Visa was denied and the woman I was in love with seemed ok with me staying in Toronto for a bit, I settled in, back in the T Dot, back, seemingly happy, but not caring about myself again. I replaced workouts with binge eating, finally realized the great loss I had experienced plus, as much as I loved my friends here, I missed LA and this amazing woman I had fallen in love with. I blew all that happiness on Chips, dips and candy.
Soon everything and everyone was to blame for my misery. When the relationship started to go south, when the cold was unbearable, everything was an excuse to be unhappy and soon I found myself slowly gaining it back. Pants that were loose when I returned were now skin tight. T-Shirts not long enough to cover my huge belly and an HR woman who was frankly rude in her delivery but correct in how unkempt I looked. I did not care. I was depressed and for 2 more years I would suffer silently each night or every weekend with this… my comfort foods. Pure sugars and toxins.
The pattern dragged on bringing me back up to 287 by September 2014. Pretending I still loved my job, pretending I was happy in my life when the truth was I was completely unhealthy and a sedentary pile of processed junk food. (They say you are what you eat) It is no wonder I had gained all that weight back.
All that unhappiness took me to therapy. Like finding a trainer I did my research met a few people and found the person I felt I could share and be vulnerable enough to help heal the broken Sam. In a couple of months I was confident enough in myself to leave behind the job I was extremely unhappy at and start my own business. By the spring of 2015, the only issue I had not conquered was my weight. Finally happy again it was time to begin the arduous task of motivating myself to take action.
The Change Occured
July 1st 2015 I set a 3 month goal to see how I could do on my own, the only motivation… MY LIFE! I had to commit myself to the work necessary to change old habits into new. Adopt a healthy active lifestyle and treat my body like the temple it is. The first step to being completely happy with myself was in my own ability to love myself enough to take care of myself. As an overweight person I was not living the life authentic to to who I truly felt I was from the inside out.
The first 3 months were fantastic, I was confident I had made the important lifestyle changes necessary to achieve my goals. The trick about health is it is so easy to be overweight. Without even realizing it we are eating food that our bodies were not designed to process. I know McDonalds tastes good, I know a sweet sugary dessert will delight me in ways my endorphins can’t handle, I also know each time I choose to put that stuff into my body I am slowly killing myself. And I want to live.
Not only do I want to live, I want to pay it forward. I want to share with as many people as I can the importance of clean healthy living. I am going to open up my world to public judgement and put my results out there. I want people to see it does not take a Keto, South Beach, Atkins anything diet that restricts your calories or provides fake processed foods from a cardboard box to lose weight. I am going to share a real lifestyle change and choices, foods that heal, that work with our bodies. I will demonstrate that eating can be a delight without killing you.
But I Fell Off the Wagon
I own the mistakes I have made in the past and feel ready to make better choices again. I will say this many times. I know the struggle, it is not easy. I will make mistake, plateau, wonder what is working and what is not. I have a starting point, knowing what has worked in the past. I have an end point, goals, an ideal weight and determination.

Okay, I know there are going to be very strong and opposing views on this. It’s a great conversation starter. I mean seriously, the obvious answer is… Well, what is it? In my opinion it is entirely subjective.
The question was first Started haunting me as I listed to and loved the song “Gimme Sympathy” by Metric. “Who’d you rather be, the Beatles or the Rolling Stones?”
So to my girlfriend at the time I posed the question. Her immediate response “The Rolling Stones”. I paused on her answer. I had expected it to be the Beatles. Not because that was my answer, but because in my mind everyone chooses the Beatles. I mean wait, what? No! Of course not all of you would. Some of you would choose the Rolling Stones.
At the time, I was confident in my answer. For me it was the Beatles. I just always remember loving their upbeat happy, sounding melodies and lyrics. When they went pure hard rock with screeching guitars like in “Helter Skelter“ or Revolution. Listening to the Beatles had always been apart of my musical history since my cousin John married his wife. In fact there are two very defining points in my musical development. The boys from my fathers pipe and drum band and my cousins 8 track collection. Yeah I said It. 8 track!

How They Measure Up!
Okay, I know there are going to be very strong and opposing views on this. It’s a great conversation starter. I mean seriously, the obvious answer is… Well, what is it? In my opinion it is entirely subjective.
The question was first Started haunting me as I listed to and loved the song “Gimme Sympathy” by Metric. “Who’d you rather be, the Beatles or the Rolling Stones?”
So to my girlfriend at the time I posed the question. Her immediate response “The Rolling Stones”. I paused on her answer. I had expected it to be the Beatles. Not because that was my answer, but because in my mind everyone chooses the Beatles. I mean wait, what? No! Of course not all of you would. Some of you would choose the Rolling Stones.
At the time, I was confident in my answer. For me it was the Beatles. I just always remember loving their upbeat happy, sounding melodies and lyrics. When they went pure hard rock with screeching guitars like in “Helter Skelter“ or Revolution. Listening to the Beatles had always been apart of my musical history since my cousin John married his wife. In fact there are two very defining points in my musical development. The boys from my fathers pipe and drum band and my cousins 8 track collection. Yeah I said It. 8 track!

Kayaking in the Johnstone Strait. A bucket List Adventure
When you have an opportunity to participate in an adventure that helps you get closer to another bucket list item, kayaking off of Vancouver Island in the summer home of the Northern Resident Orcas, you go. In July 2018, we flew from our tiny home island home in Mexico to experience a 3 nights camping experience in the Johnstone Strait with Spirit of the West Adventures.
Spirit of the West Adventures and Trip Intro
First off, I cannot say enough about the group we went with and the guides. Spirit of the West Adventures provided an excellent experience. The guides were incredibly friendly and knowledgable. Not just about the Johnstone Strait, but also about the wildlife. At every meal they provided us with delicious food prepped by a very thoughtful and generous staff back on Quadra Island.
Not once did we feel like we were not welcome or accepted. While we were the only queer folks on the experience, from the first introductory meeting at the Heriot Bay Inn on Quadra Island the night before the trip through the drop off after the trip ended we were comfortable and got along great with everyone. We even made some new friends.
In case you are wondering. Quadra island is an incredibly gorgeous place as well. The sunsets linger long into the evening and the sounds of nature just appear to calm the body and soul. Across the bay from Campbell River, a quiet little Canadian BC town you can whale watch from in the summer.
The morning after the intro meeting we were picked up by the guides, grabbed other adventurers then headed to the dock, loaded up 2 boats with all the gear and off we went. The boat taxi ride was two hours north to the Johnstone Strait basecamp. This would now our home for the next 3 nights. Each group of 2 were assigned a tent (all of which had stunning views of the water), were prepped on how to be safe and the types of animals we could encounter. All of the tents faced the water where you could see over to the Robson Bight.

It Was All About the Kayaking
We no sooner landed at camp and the first paddle was planned. From the first paddle until the last (the one where I fell in the freezing cold water) was a majestical and peaceful experience with nature. There were bald eagles flying around the camp, tales of wolves and cougars as well as the hope we would see the mammal we all came for… the Orca whale. After all, this was their favourite place to shop for groceries. The Chinook salmon spawning in the local waters close to the Robson Bight are the north residents favourite meal. The area also attracts the grizzly bears down to the pebbly waters edge in hopes of grabbing a bite.
Despite the excitement leading up to the trip. Despite the call within our hearts to engage with the mighty Orcas in their natural habitat, we never got to see any Orcas. During one of our paddles they were noted to be just farther up the strait at Telegraph Cove. Too far to paddle to make it back to camp before sunset. The rest of the days we all kept hoping it would happen. It just did not. Well, save for that magic early morning with Tara.
I am a person who will need to use the bathroom several times each night. So on the first morning around 4am when we popped out of the tent to relieve ourselves, we paused to hear this strange sound from below the cliffs in the water. It was in rhythm, consistent getting closer and then moving farther away. The mist prevented us from seeing what was making the noise, but we both knew. The Northern Residents were traveling right by our camp. Even better it was a beautiful experience shared by myself and Tara!

4 days and 3 nights deep up in the British Columbia wild at one with nature, getting outside of my current comfort zone and challenging myself to grow. That was what this trip was about, in addition to experience in the wild.
